MIGHTYLICIOUS Gluten Free Cookies

Mightylicious gluten free cookies is the creation and passion of founder, Carolyn Haeler.  A lifelong foodie. Haeler’s love language has always been baking.  In 2012, at the age of 31, she was diagnosed with celiac disease. Celiac disease is a hereditary autoimmune disease where the ingestion of gluten damages the small intestine. A protein found in wheat, rye, and barley.

In 2017, she purchased a box of store-bought gluten free cookies. The cookies were so bland that she threw them away. Haeler decided she could bake a better tasting cookie. Leaving her finance job at JP Morgan. Spending four months, baking 15 hours a day. Through this process she learned that the key to great gluten free baking was in the flour blend.

Rice flour, the most frequently used flour in gluten free baking, is manufactured for cooking, not baking. The rice particles are not milled fine enough to absorb moisture and homogenize with the other ingredients when baking. Other flours, such as sorghum, garbanzo bean, and amaranth flours would need to be used.  Unfortunately, these flours have chalky or gritty textures and bitter after tastes. Too strong for the delicate flavor profile of a cookie or cake.

Haeler went directly to the mill to get rice flour compatible for baking. Creating a gluten free flour blend that looks, tastes, and behaves like wheat flour. Mightylicious hit the shelves of Whole Foods Markets Northeast division in January of 2018, just 6 months after the company was Incorporated. Headquartered in New Jersey.

On July 14, 2026, Mightylicious Gluten Free Oatmeal Coconut Cookies have once again been recognized among Good Housekeeping's ‘Best Snacks of 2026’, marking the second consecutive year the product has received the prestigious honor. The cookies are also Certified Vegan, Certified Gluten-Free, Kosher, and Non-GMO.

Receiving it two years in a row is incredibly meaningful because it reinforces what our customers tell us every day that gluten-free cookies can be truly exceptional," said Carolyn Haeler, founder and owner of Mightylicious. I’ve tried all seven flavors of the cookies. My favorites are the Salted Peanut Butter, Oatmeal Coconut, Brown Butter Short Bread, and Oatmeal Raisin. They have bold flavors and smell freshly baked. Each bag contains wrapped cookies, making them ideal for lunchboxes, travel, entertaining, and snacking. Other flavors include Double Dutch Chocolate Chip, Chocolate Chip, and Brown Butter Chocolate Chip.
